Chicken salad

Pretty simple
Pull the chicken off the bone into a medium sized bowl.
Chop up some onion (I like to use the one I roasted with the chicken) and add to chicken
I use about 1 teaspoon of dijon mustard for every tablespoon of mayonnaise.  Mix it up and grab some bread.


Leftover herbs

Fresh herbs don't keep too well. You can preserve them by freezing them in butter.  Just chop up your herbs and mash them into softened butter.  Put the butter onto some wax paper and roll it into a log.  Wrap it in plastic and put it in the freezer.  The next time you are roasting a chicken, or depending on the herb, fish just take it out and you are ready to go.


Turkey chili

This is a pretty simple one. Everyone has their own recipe for chili.  Mine is spiced with lots of chili powder cumin and garlic.  My husband's has chili powder as well, but that is where the similarity ends. He spices with allspice and brown sugar.  Find your recipe, shred your leftover turkey and substitute it for the ground meat.  Let simmer or put in a crock pot and you have dinner.

Johnny cakes (that's what my husband calls them anyway)

Leftover mashed potatoes? No problem.  They are great for breakfast. Just form them into a patty and fry them up in a little, or a lot, of butter.  Be patient, let them go for a few minutes on each side if you want a nice crunchy crust.  For an extra treat mix a little shredded cheese in the middle.
